Mango cucumber pepper salad is a very colorful summer comfy salad. Mango which is the main ingredients in today’s salad is a member of the drupe family. Olives, coconuts and dates are also types of drupes. They have a creamy sweet taste and enriched with 20 vitamins and minerals.

Research shows that mangoes have been considered as the most widely consumed fruit in the world. There are many health benefits of mangoes, few among them are like decreased risk of muscular degeneration, improvement in digestion and bone health and help in hair growth and shine. Mangoes

are also rich in copper, calcium and iron and antioxidants such as beta –carotene and zeaxanthin. Eating mangoes also decreases the risk of obesity and heart disease and promotes overall health. So add on to your health with this super delicious, healthy colorful summer salad.

Ingredients:

1 ripe mangoes peeled and cut into chunks

1 cucumber peeled and cut into chunks

1 green bell pepper seeded cut into small chunks

1 tomato seeded cut into chunks

8 to 10 cubes of tofu/ feta/ Indian cottage cheesed

2 tbsp orange juice

1 tbsp lime juice

1 tsp lemon juice

½ tsp honey

salt and pepper to taste

1 tbsp freshly chopped cilantro/ parsley / mint

Methods

In a small bowl take some orange juice, lime juice and lemon juice, honey, salt and pepper. Whisk and keep aside. In another big bowl take all the other ingredients. Pour the lime mixture and toss a little. Take this in a serving dish, bit chilled topped with your favorite greens. Enjoy a delicious colorful summer salad.

  1. This recipe looks pretty tasty.Many fruits and vegetables ‘contain’ vitamins and/or minerals (they are not ‘enriched’ in them). Also, evidence has shown that increasing the range of fruits and vegetables as well as the overall amount you consume, in addition to leading a healthy lifestyle will reduce your risk of developing many chronic diseases. So whilst tasty there’s nothing particularly special about mangoes.
